Easy Tasty Breakfast Recipe

Gone are the days of cold cereal and store-bought toaster waffles. Now breakfast time is all about easy three-ingredient avocado bowls, umami-packed egg skillets, and breakfast cookies. Yes, breakfast cookies.First off, a breakfast cookie is exactly what it sounds like—a cookie for breakfast. This tasty version is packed with energy-boosting ingredients that will kick off your day in the most delicious way: A combination of protein-filled almond butter, fibrous oats, dried fruit, dark chocolate, and more.

Makes two dozen cookies

3 large, very ripe bananas, peeled
1/2 cup creamy almond butter
1 tablespoon butter, room temperature
2 tablespoons honey
1 teaspoon vanilla extract
2 1/2 cup oats
1 teaspoon baking powder
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup (at least 60 percent cocoa) dark chocolate chips
1/4 cup dried cherries
Preheat oven to 350°. Line a large baking sheet with parchment paper and set aside. In a large bowl, mash the ripe bananas with a fork. Stir in the almond butter, butter, honey, and vanilla extract. Mix until smooth. In a separate medium bowl, stir together the oats, baking powder, cinnamon, and salt. Add the dry ingredients to the wet ingredients and stir until combined. Stir in the chocolate chips and dried cherries. Drop dough by the spoonful onto prepared baking sheet. Bake for 12 to 14 minutes or until cookies are done. Let cool on baking sheet for two minutes.
