“I walked into our lounge Friday evening and he was on his knee with a beautiful box in his hands,” the bride-to-be tells PEOPLE. “I saw the sparkle coming out of the box, so pure and perfect and simple. And very unexpected.”

Rhodes, 33, proposed to his fiancée with a 6.5 carat radiant cut canary diamond that was designed by Gabriel Jacobs of Rafaello and Co. Jewelers in New York City.
